Meringues should be stored at room temperature in an airtight container. Keep them away from humidity and moisture, and they’ll stay fresh for up to 2 months. If your meringues lose a little crunch, spread them on a lined baking sheet and bake at 200°F for 10 minutes to crisp them back up.
